They cover them in fondant. In this video, Essential Cakes pastry chef Etwin Gordon teaches you how to color fondant so you get the exact shade you want for your cakes and cake decorations.  \"How to Color Fondant  We\'re going to learn how to color fondant so for this you will need a nice size of fondant.  Any brand will do.  You can also get that from any craft store or cake decorating supply store.  I\'m going to use some gloves so that I don\'t get coloring all over my fingers.  I don\'t want to use too much of this.  This is just some confectioner\'s flour and a little cornstarch but it\'s just so that it doesn\'t stick to the table.  You don\'t want to put too much, just enough so we can roll our fondant.  What you want to do is just kind of make a well for your coloring.  You want to apply just a little at a time, just so you get the correct color that you want and you\'re just going to knead it, just like you knead dough.  You\'re going to just keep rolling and pushing into the dough and then you should start to see the color come through.  Once the color has been blended a little, I\'ll take the gloves off.  Okay, you can also put a little bit of this on your hands so that it doesn\'t stick to the fondant.  Without the gloves, you can get a better roll on your fondant.  It takes a little while to get it to knead in unless you\'re using a smaller piece.  Now if you want light blue, this will be your perfect amount of food coloring and you can use any food coloring.  You can also get that at your local craft store as well.  You want to make sure that it\'s kneaded nicely so that you don\'t have these lines in it, so we\'re just going to keep kneading until our color is fully blended.  If you want it darker, of course, you just keep adding more food coloring and that will give it a darker color as you need it to be.  So you can either use a white fondant like what I\'ve used and you can color it, but it\'s also sold in a variety of colors so you can buy it already colored.  It does come in one, kind of a darker color, so you can always add white fondant to it to make it lighter if you need to.  All right, so our fondant is a nice light blue and what we\'re going to do is, when you\'re going to use this, you\'re going to want to maybe color this a day ahead of time so that it doesn\'t crack your fondant and then what you want to do is make it into a nice ball and then you want to take some Saran Wrap and that\'s going to help to basically let your color set in and it\'s going to keep your fondant nice and soft so that it doesn\'t crack and it\'ll be great for decorating the next day.  So you put this in plastic and you put it in a sealed container and use it the following day.\"'
